Ingredients

  • 2 pieces boneless skinless chicken thighs
  • 1 cup diced tomatoes
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • to taste salt and pepper
  • 4 corn tortillas, cut into strips
  • 1 lime, cut into wedges
  • 1 bunch of fresh cilantro, chopped
  • 1 cup shredded cheese (optional)
  • 0.5 cup sour cream (optional)
  • 0.25 cup coconut milk (optional)

Method

  1. Place the chicken, tomatoes, corn, beans, onion, garlic, broth, cumin, chili powder, oregano, smoked paprika, salt, and pepper in the slow cooker. Stir to combine.
  2. Cover and cook on low for 8 hours.
  3. After cooking, remove the chicken, shred it with two forks, and return it to the pot.
  4. Add the tortilla strips and stir; if you like a richer mouthfeel, stir in coconut milk at this point.
  5. Let the soup sit for 10 minutes to allow the flavors to meld.
  6. Ladle the soup into bowls, topping each with tortilla chips, a squeeze of lime, chopped cilantro, shredded cheese, and a dollop of sour cream if desired.
  7. Serve hot, garnishing with lime wedges, cilantro, and a sprinkle of cheese. Before serving, check the chicken’s doneness with a food thermometer to ensure it’s cooked through.

Notes

Let the shredded chicken rest in the hot broth for 10 minutes before returning it to the pot to keep it juicy; add a pinch of crushed red pepper flakes for a touch of heat if desired.
