Ingredients

Pulled Pork
  • 3.5 lbs pork shoulder bone-in or boneless, both work
  • 1 cup apple cider not apple juice, real cider has that tang
  • 1 cup dry white wine or extra cider if you prefer alcohol-free
  • 3 tbsp brown sugar packed
  • 2 tsp smoked paprika gives that backyard BBQ flavor
  • 1.5 tsp garlic powder
  • 1 tsp dry mustard powder
  • 0.5 tsp black pepper
  • 1 tsp salt
Creamy Coleslaw
  • 4 cups shredded green cabbage finely shredded
  • 2 cups shredded purple cabbage adds color and slight crunch
  • 1.5 cups mayonnaise full fat for best texture
  • 0.5 cup apple cider vinegar taste and adjust if you like it tangier
  • 2 tbsp yellow mustard
  • 1.5 tbsp sugar
Crispy Apple Slaw
  • 2 cups thinly sliced apples Honeycrisp or Granny Smith work best
  • 0.25 cup cornstarch for coating
  • 4 tbsp olive oil
  • 0.5 tsp salt

Method

Prepare the Pork
  1. Pat the pork shoulder dry with paper towels and generously coat all sides with brown sugar, smoked paprika, garlic powder, dry mustard, black pepper, and salt.
Cook in the Slow Cooker
  1. Pour the apple cider and white wine into the bottom of the slow cooker, then place the seasoned pork on top. Cover and cook on low for 7 hours, or until the meat is fork-tender.
Shred the Meat
  1. Remove the pork to a cutting board and let it rest for 10 minutes before shredding it with two forks into bite-sized pieces; reserve the cooking liquid for later if you need to moisten the meat.
Make the Creamy Coleslaw
  1. In a large bowl, whisk together mayonnaise, apple cider vinegar, yellow mustard, and sugar until smooth, then fold in the shredded green and purple cabbage until evenly coated.
Crisp the Apple Slaw
  1. Toss the thinly sliced apples with cornstarch and a pinch of salt, then fry in a small amount of olive oil over medium heat until golden and crisp, about 3–4 minutes per batch.
Serve
  1. Transfer the shredded pork back to the slow cooker or a serving bowl, spoon some of the reserved cooking liquid over it if needed, and serve alongside the creamy coleslaw and crispy apple slaw.
Check Doneness
  1. Before serving, verify that the pork is cooked through by checking the internal temperature with a food thermometer to ensure it meets your local safety guidelines.

Notes

Don't skip the 10-minute rest after shredding; it lets the juices redistribute so the meat stays moist instead of falling apart into dry strands. For the crispy slaw, toss the apple slices in a little cornstarch right before frying to get that perfect crunch without sogginess.
