Method
Browning the Beef
- Pat the beef cubes dry with paper towels and season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat until shimmering.
- Working in batches to avoid crowding, sear the beef until deeply browned on all sides — about 3-4 minutes per batch. Transfer cooked beef to the slow cooker.
Building the Flavor Base
- In the same skillet (don't wash it!), add the chopped onion and cook until softened and translucent, about 5 minutes.
- Stir in the garlic and cook for 30 seconds until fragrant. Pour in the red wine, scraping up any browned bits from the bottom of the pan.
- Add the tomato paste, thyme, rosemary, and paprika to the skillet. Stir well to coat everything, then pour the mixture and any remaining liquid into the slow cooker with the beef.
Slow Cooking
- Add the beef broth and thyme sprigs to the slow cooker. Stir once to combine.
- Cover and cook on low for 3 hours. The beef should be nearly tender but still holding its shape.
Adding Vegetables & Finishing
- Remove the thyme sprigs. Add the potatoes, carrots, parsnips, and turnips to the slow cooker, stirring gently to submerge them in the liquid.
- Cover and continue cooking on low for 2 more hours, or until the vegetables are fork-tender and the stew has thickened slightly.
- Before serving, taste the stew and adjust seasoning with salt and pepper. If the broth is too thin, simmer uncovered on high for 15-20 minutes to reduce.
Notes
Don't rush the browning step — that 5 minutes of searing builds the fond that turns into a rich, deep flavor in the stew. Also, add the potatoes and carrots in the last 90 minutes on high if you prefer them chunky rather than melting away.
