Ingredients

  • 1 box 8 oz cavatappi or rotini pasta Do not rinse after draining
  • 2 cups water Just enough to cover pasta
  • 1 cups unsalted butter Room temperature so it melts quickly
  • 6 cloves garlic Minced finely
  • 2 tbsp fresh lemon juice About 1 small lemon
  • 1/2 cup chicken broth Low sodium preferred
  • 1/2 cup heavy cream Full fat for best emulsion
  • 1 cup freshly grated Parmesan cheese Grate your own block; pre-grated has anti-caking agents that won't melt smoothly
  • 1/2 cup large shrimp Peeled, deveined, and tails removed; thawed if frozen
  • 2 tbsp olive oil Extra virgin for finishing
  • 1/2 tsp red pepper flakes Adjust to taste
  • 1/2 cup fresh parsley Chopped, for garnish

Method

Cook pasta in slow cooker
  1. Add the cavatappi pasta and 2 cups of water to the slow cooker insert. Cover and cook on low for 30 minutes, stirring once halfway through, until the pasta is just tender but still firm.
Make the garlic butter base
  1. While the pasta cooks, melt the butter in a small saucepan over medium heat. Add the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant but not browned. Remove from heat.
Combine and finish
  1. Drain the pasta well and return it to the slow cooker. Stir in the heavy cream, chicken broth, lemon juice, and half of the Parmesan cheese. Stir in the butter mixture and toss gently until everything is coated and the sauce is creamy.
Serve with shrimp
  1. Sprinkle the remaining Parmesan cheese over the top. Sear the shrimp in a quick pan with olive oil for 1-2 minutes per side until pink, then scatter over the pasta. Top with chopped parsley and serve immediately.

Notes

Shrimp will cook in just 10-15 minutes on low, so add them after the pasta is nearly tender to keep them plump. If you want a richer sauce, stir in a splash of heavy cream off the heat after turning off the cooker.
