Ingredients

Main Components
  • 4 pieces bone-in, skin-on chicken thighs
  • 1.5 lbs baby potatoes quartered if larger, halved if small
  • 1 lemon fresh lemon zested and juiced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary crushed between your palms before adding
  • 0.5 cup chicken broth low-sodium if possible
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method

Prep and Layer
  1. Pat the chicken thighs dry with paper towels and season both sides lightly with salt and pepper. This helps the seasoning stick and prevents the skin from turning soggy.
  2. In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, thyme, rosemary, and a splash of the chicken broth. This creates a flavorful coating that will baste the chicken as it cooks.
Assemble in Slow Cooker
  1. Place the quartered potatoes in the bottom of the slow cooker, as they need the most time to become tender.
  2. Arrange the chicken thighs in a single layer on top of the potatoes. Pour the remaining chicken broth around the edges of the pot, not directly over the chicken, to prevent boiling.
  3. Drizzle the herb-lemon mixture evenly over the chicken and potatoes. The mixture will slowly release its flavor during the long cook.
Cook
  1. Cover and cook on LOW for 7 hours, or until the chicken is fork-tender and easily pulls away from the bone. Do not stir during this time, as it will break up the potatoes.
Finish and Serve
  1. Before serving, carefully transfer the chicken and potatoes to a serving platter, reserving the liquid in the pot.
  2. For a quick sauce, whisk the reserved liquid with a teaspoon of cold butter until glossy, then spoon over the top. This adds richness and helps it coat the food beautifully.

Notes

Don't skip the lemon zest—it's the secret that keeps the chicken from tasting one-note. Also, I always save a few extra potato wedges to crisp up in the oven during the last 20 minutes; they're the best part of the meal. If you want a thicker sauce, mash a couple of the potatoes against the side of the pot before serving.
