Ingredients

  • 3 pounds beef chuck roast
  • 1 large yellow onion quartered
  • 1 bottle dry red wine about 750 ml
  • 1 can beef broth about 14.5 oz
  • 4 cloves garlic minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound carrots peeled and cut into 1-inch chunks
  • 1 pound russet potatoes peeled and cut into 1-inch chunks
  • 2 tablespoons unsalted butter
  • 0.5 cup heavy cream
  • 0.25 cup sour cream
  • 2 tablespoons fresh parsley chopped

Method

Season and Sear the Beef
  1. Pat the beef chuck roast dry with paper towels, then generously coat it with salt, pepper, and flour, making sure to shake off any excess.
Build the Base in the Slow Cooker
  1. Place the beef roast in the center of the slow cooker insert, fat side up.
  2. Add the quartered onion, minced garlic, red wine, and beef broth around the meat, making sure the liquid covers about one-third of the roast.
  3. Sprinkle the dried thyme and rosemary over the liquid.
Cook the Roast
  1. Cover the slow cooker with the lid and cook on low for 6 hours.
Add Root Vegetables
  1. After 6 hours, carefully remove the roast and set it aside on a plate. Carefully pour the cooking liquid into a fine-mesh strainer over a bowl to remove any large onion pieces or herbs, discarding the solids.
  2. Return the strained liquid to the slow cooker, add the carrot and potato chunks, and nestle the roast back on top. Cover and continue cooking on low for another 1.5 to 2 hours, or until the vegetables are tender and the beef is fork-tender.
Make the Parsley Cream and Finish
  1. While the roast finishes, melt the butter in a small saucepan over medium heat. Whisk in the heavy cream and bring to a gentle simmer for 1-2 minutes to slightly reduce and thicken.
  2. Remove the saucepan from heat and stir in the sour cream and chopped parsley until fully combined.
  3. Transfer the roasted beef and vegetables to a large serving platter and tent loosely with foil to keep warm.
  4. Pour the parsley cream over the meat and vegetables, or serve it on the side for everyone to drizzle as they prefer.
Final Check
  1. Before serving, verify the doneness of the beef roast with a food thermometer to ensure it has reached a safe internal temperature for your region.

Notes

Do not add the carrots and potatoes until the last two hours of cooking, otherwise they will disintegrate into mush. For the parsley cream, let the sour cream come to room temperature for ten minutes so it blends smoothly without curdling when stirred in at the end.
