Ingredients
Method
- Season the pork tenderloin with salt and pepper.
- Sear the pork in a hot skillet with a little oil until browned on all sides; this adds depth of flavor.
- In a bowl, whisk together honey, Dijon mustard, apple cider vinegar, brown sugar, minced garlic, and a splash of water or broth to make the sauce.
- Place sliced apples and onion at the bottom of the slow cooker.
- Place the seared pork on top of the apples and pour the sauce over it.
- Tuck rosemary sprigs around the pork.
- Cover and cook on low for 7 hours (420 minutes).
- Remove the pork and let it rest for 10 minutes before slicing.
- Serve the pork slices with the apples and spoon the remaining sauce over the top.
- Verify doneness with a food thermometer before serving.
Notes
I always add a splash of apple cider vinegar to cut through the sweetness, and I slice the apples into rings so they soften nicely and stay intact during the long cook.
Food Safety Note: Always use a food thermometer to confirm your dish has reached a safe internal temperature before serving, and follow your country’s official food safety guidelines for meat, poultry, and slow-cooking.
