Ingredients

  • 1 can chickpeas drained and rinsed
  • 4 cups frozen spinach thawed before adding
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 can diced tomatoes with juice
  • 1 can coconut milk full-fat for creaminess
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt to taste
  • 1 tablespoon tamarind paste optional, add before serving
  • 2 tablespoons lemon juice optional, add before serving

Method

  1. In a large bowl, combine diced onion, minced garlic, grated ginger, cumin, coriander, turmeric, garam masala, cayenne pepper, and salt.
  2. Transfer the spice mixture to the slow cooker. Add the drained chickpeas, diced tomatoes, and coconut milk. Stir to coat everything in the spices.
  3. Cover and cook on low for 4 hours, or until the flavors have melded and the chickpeas are tender.
  4. About 30 minutes before the end of cooking, stir in the thawed spinach. Cover and continue cooking until the spinach is heated through and bright green.
  5. Remove the lid, stir in tamarind paste or lemon juice if using, and taste for salt, adding more if needed.
  6. Serve hot over steamed rice or with warm naan bread, and enjoy the comforting aroma and flavors of this slow‑cooked curry.

Notes

Add the spinach in the last 30 minutes so it stays bright and avoids turning into mush; if using frozen, let it thaw a bit before adding. For a subtle tang, stir in a teaspoon of tamarind paste or a splash of lemon juice just before serving.
