Ingredients

  • 2 lb pork shoulder (cut into a 3-4 inch cube)
  • 0.5 cup honey
  • 0.5 cup soy sauce
  • 0.25 cup apple cider vinegar
  • 0.25 cup brown sugar
  • 1 cup pineapple juice
  • 1 cup water
  • 1 tsp ground ginger
  • 3 clove garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 1 tsp sesame oil
  • 4 cup shredded cabbage
  • 2 cup shredded carrots
  • 0.5 cup thinly sliced red onion
  • 0.25 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp granulated sugar
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method

  1. Season the pork shoulder with salt, pepper, cumin, smoked paprika, and minced garlic.
  2. Place the seasoned pork in the slow cooker.
  3. In a bowl, whisk together honey, soy sauce, apple cider vinegar, brown sugar, pineapple juice, water, grated ginger, and sesame oil.
  4. Pour the sauce over the pork, making sure it's well coated.
  5. Cover and cook on low for 8 hours (480 minutes).
  6. During the last 30 minutes, add shredded cabbage and carrots to the slow cooker if you want them to soften; otherwise keep the slaw separate.
  7. Once the pork is tender, carefully remove it from the slow cooker.
  8. Shred the pork with two forks, discarding any large fat pieces.
  9. Return the shredded pork to the slow cooker and stir to coat it in the remaining sauce.
  10. In a large bowl, combine shredded cabbage, carrots, sliced red onion, chopped cilantro, lime juice, olive oil, sugar, salt, and pepper. Toss until well mixed.
  11. Use a food thermometer to confirm the pork has reached a safe internal temperature before shredding and serving.

Notes

I discovered that adding a splash of pineapple juice to the slow cooker before adding the pork helps keep the meat moist and infuses extra fruity sweetness. Also, I like to toss the slaw with the sauce just before serving to keep it crisp.
